Our neighboring country, Thailand, offers unique food highly influenced by western and eastern dishes. Thai people had mixed in these foreign influences, transformed it into their own and made it identifiable in its own right. A dish can incorporate all five tastes: sweet, bitter, sour, salty and spicy. According to their history, their meals have less meat in it because of Buddhism thus leading to the use of aquatic animals, vegetables and herbs were made as ingredients in their meals. Thai cuisine can be accurately categorized according to their region: Central Thailand which serves moderately flavored meals filled with herbs and some sugar. Northern Thailand produces meals with a light flavor, the use little spices only not very spicy chili, less salty and no sugar. North Eastern (Isan) Thailand offers very spicy and strong tasting dishes filled with chili, salt, herbs and spices. And Southern Thailand uses turmeric and tends to use coconut milk to produce very strong flavored dishes.

Thai food doesn’t want to be viewed as simple. It wants to be viewed as a firework of flavors bursting in your mouth in one sitting. What is served in a proper Thai meal should consist of steamed rice, a soup, a curry dish with condiments and a dip with accompanying fish and vegetables. If a curry dish is unavailable, it can be replaced by a spicy salad. The soup served can also be spicy, consequently, the curry should be replaced by something un-spiced. There must be an equal harmony of tastes and textures within individual dishes and the entire meal.
